KNIFE MAKING / MODERN YANAGIBA KNIFE 수제칼 만들기 #158
Переглядів 6 тис.3 роки тому
It is said to be a willow leaf, and the word "Yanagi" is generally a sword that comes to mind when it comes to mind when you think of it. A form that is long and thin and specialized for the use of sashimi. This is because the pointy side is useful in one way or another. I usually use 440c stainless steel because it has a strength of 59.2hrc and a tensile strength of 2,268 Mpa. The Tumor Scar B...

KNIFE MAKING / BONING KNIFE 수제칼 만들기 #154
Переглядів 11 тис.3 роки тому
A boning knife is a type of kitchen knife with a sharp point and a narrow blade. It is used in food preparation for removing the bones of poultry, meat, and fish. Generally 12 cm to 17 cm (5 to 6 ½ in) in length , it features a very narrow blade. Boning knives are not as thick-bladed as some of other popular kitchen or butcher knives, as this makes precision boning, especially deep cuts and hol...

Honesuki is specifically designed for de-boning and breaking down poultry, but many people have found the knife is also capable of filleting fish and red meat or carrying out many of the tasks. The Honesuki shares the triangular blade profile of the larger Garasuki, but it is both thinner and lighter, despite it still possessing a tough and durable edge. It should not, however, be used to split...

Nice workmanship but have you ever skinned anything in the wild ? Because if you did you would find out that your hands get greasy and slippery so a smooth handle is not so good because even while skinning you still have to do a lot of cutting . Also more of a drop point design would be better for the opening cuts .
